Colleen's Bread Rolls - No Yeast!

We thought we'd share something different with you this week. Our lovely Colleen (LSM chef and nutritional advice queen) has always provided us with much inspiration for our cooking - but today she's given us her simple bread roll recipe using NO YEAST. A miracle - especially as it's so hard to find some at the moment.




INGREDIENTS
1 cup flour – I used 1/2 plain and ½ wholemeal
1 tsp / 5ml baking soda
1 tsp / 5ml salt
½ cup milk (of your choice)
1 tbs / 30ml mayonnaise (or vegan substitute)

Note - if the mixture seems very dry add a drop more milk or mayonnaise or a tsp of vegetable oil


METHOD

1. Pre-heat oven to 170 degrees (fan oven)
2. Mix dry ingredients together
3. Add wet ingredients and mix together well
4. Divide into 5 pieces and please in greased muffin pan
5. Cook for approx. 15 minutes or until golden brown
6. Allow to cool, and serve.

These are best eaten fresh, they don't keep very well!

You can try different varieties of flour, but be aware you may need to adjust wet ingredients to suit!
