Vegan Friendly Apple Cake
Serves 6-8
INGREDIENTS
100g Dairy free spread (or soft butter if not vegan)
100g Brown Sugar (reserve 2 tsp for top)
4 Eating Apples, cored and grated (my choice is Granny Smith)
200g Plain Flour + 2tsp Baking Powder or 200g Self-Raising Flour
100g dried fruits – (I used chopped apricots and raisins so be
adventurous and use whatever you have in the cupboard)
1tsp each Cinnamon & Mixed Spice
1-2tb water if batter is thick
Further ½tsp Cinnamon for top
METHOD
Preheat oven 180c Fan Oven 170c Gas 4
1. Cream the spread/butter and sugar.
2. Mix in the remaining ingredients except the sugar and cinnamon
for the top.
3. Pour into a greased 8in round loose bottomed cake tin and flatten
with a spatula.
4. Bake for 30 minutes or until golden and firm remove from oven
and sprinkle with the reserved sugar and cinnamon and return to
the oven for a further 5 minutes.
5. Cool in the tin before storing.
6. This is a dense moist cake that needs to be eaten within 3 days
